Tomatoes, tomatoes, well you know.  Blueberry muffins back by popular demand this morning….. And a BLT for those of you that will be going to lunch at LBC.

I have been wanting to share some farm to table recipes since sometimes all these vegetables can be overwhelming.

Annie’s so easy tomato pasta sauce.

Pre-heat oven to 375 degrees

Core eight to ten medium tomatoes.

Put on baking sheet and stuff garlic clove in each core. Brush with olive oil and kosher salt and pepper.

Put in oven and bake until tomatoes look wilted.

Take out of oven and cool. When cool cut in half and drop into blender, blend about two at a time. Take out or keep in garlic clove according to one’s love of garlic.

Pore sauce on top of pasta as desired……..

Good morning.  We are featuring Blueberry muffins from the Blueberry Patch Farm.  We noticed that the box has a Make Mine Mississippi seal…..this seems to be a grant that the farm has been award to offset marketing costs.  Seems like a great public program for small agriculture business.

Okay, We have great air conditioning at LBC…. And now we have Eggs Benedict as a special for breakfast and the great blueberry muffins.  Lunch will include tacos, Chicken salad sandwich and Red beans and rice…
